Cedar Plank Salmon

This dish at Riffs is absolutely lovely. The appropriately proportioned salmon fillet is lightly seared to perfection with a drizzle of bay laurel butter, and topped with a variety of mushrooms from the renowned Hazel Dell farm here in Colorado. I love how the salmon almost falls apart as you start even thinking about taking your first bite, and the hearty 'shrooms really standup to the richness of the fish.

Many of the menu items at Riffs, like the salmon, are small plates—and this, my friends, is a good thing! Chef/owner John Platt has created a wonderfully diverse menu that changes with the seasons featuring local farm fresh ingredients, and trust me, it will be a joy to try as many as you can.
