Heirloom Tomato Grilled Cheese

Can a simple grilled cheese be sublime? The answer is Yes* (*but you must be living in or visiting the city of San Francisco). Fortunately I was on business there last week where my partner and I had the good fortune to visit a few choice eateries. One of them was Absinthe Brasserie & Bar, whose Heirloom Tomato Grilled Cheese with its sweet sun-ripened tomatoes, fresh mozzarella, macadamia nut-basil pesto & arugula took this classic to the 8th plane of existence.

It's the plane where Taoist manuscripts teach us that by biting down through the crunchy outer level and into the cheesy gooey inner space, we can discover the incarnation of our souls to discover the brilliance of the pesto & arugula life-force. OK, maybe... just maybe, I'm exaggerating a touch, but this is one damn good sammie. Add in the lightest, most ethereal house-made sour cream & onion chips, and this might be one of the best grilled cheese lunches I've EVER had.
