Let me first say that I'm a fairly simple guy with basic tastes. I enjoy unadulterated foods like plain cheeseburgers, Buffalo wings, tomato soup & grilled cheese, etc. And while the Albondiga at Bellota is NOT one of them, I truly LOVED this dish anyways! At its center are the most tender yogurt-braised chicken meatballs. The dish then adds a copious cornucopia of flavor including: spinach, pinenut migas (which is this wonderfully complex breadcrumb mixture), and finally pleases the palette by placing petite pops of pomegranate on top... perfection!

Sangria

Putting aside for just a moment that this Sangria rojo with its citrus, berry & bay leaf pomp & circumstance is just about the prettiest thing I've ever seen, I can tell you that it tastes even better. I love the subtle complexity of flavors created with sweet notes from the white wine and balanced with just enough of the the red wine tannins. The good people at Bellota add in an herbal mélange of gin with its aromatic juniper & hints of bitter orange plus an herbaceous extract of rosemary & thyme. Finish it off with a touch of brandy for an absolutely divine version of sangria perfection.
