Hummus & Grilled Flatbread

Set in the most unlikely of Boulder locations up on "The Hill" at the epicenter of CU college student activity is an oasis of casual fine dining with a distinctive Spanish flare. As the sun washes in over the wonderfully relaxed atmosphere, Cafe Aion serves up a wide variety of tapas in a range of sizes & taste delights. So often, with a simple dish, it can be easy to flub the few ingredients negating the purity of its deliciousness— not so with the house-made Hummus & Grilled Flatbread. The perfectly ground chickpeas with just the right amount of olive oil & spices provide a sublime texture for the equally delicious grilled flatbread to dip it in.

Other mouthwatering tapas I love include: Roast Organic Beets with feta, almonds & mint, Fried Cauliflower with saffron yogurt & cumin, 3-step Chicken Wings tossed in harissa, Croquetas de Bacalao made with house-cured salt cod & mojo rojo. While much of the menu is seasonal and variations of dishes change with the weather, it's always delicious and a welcome change of pace to visit this wonderful cafe.
