The Rose
General Lee & Red Harvest Cocktails
Even though I've been living in Colorado for 20+ years, I've only recently discovered how good the world-class skiing is at the Beaver Creek, Bachelor Gulch & Arrowhead resorts (all connected, but distinctly different). Of course I mention this widely known fact because après-ski is all about having fun with friends over delicious drinks. The Rose, an eclectic & cozy cocktail lounge located in Edwards, CO is my absolute favorite place to go after hitting the slopes on the western Arrowhead side.
When I go to The Rose with my partner in crime, Myriah, she always starts with the Red Harvest. Given a choice of two clear liquors, gin or vodka, this cocktail gets its wonderful rosy hue from red bell peppers. The wonderfully unique vegetal notes from the peppers are perfectly balanced with chili syrup then brightened with a hint of mint & lime for a uniquely crisp, subtlety sweet & delicious original cocktail creation from The Rose.
I always start with the mind-numbingly good General Lee— another Rose original. Based on bourbon, it adds ginger, grapefruit, agave & orange bitters. Again, the key word is balanced. The bourbon & ginger seem to ground this drink where other citrusy-sweet cocktails may get too cloy, but this recipe gets it just right— one of my favorite high elevation après-ski imbibements anywhere in Colorado.
